Ingredients
  

  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chipotle powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup diced fresh pineapple
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 lime cut into wedges
  • 1/4 cup crema or sour cream
  • 1 tsp hot sauce (optional)

Instructions
 

  • Pat the chicken thighs dry and slice into bite-sized pieces for quicker cooking.
  • In a bowl, mix olive oil with cumin, chipotle powder, garlic powder, smoked paprika, salt, and pepper. Add the chicken and toss to coat evenly.
  • Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes, stirring occasionally, until the pieces are cooked through and nicely browned.
  • Warm the tortillas in a dry pan or microwave just until pliable. Keep them warm wrapped in a clean towel.
  • Assemble: place a portion of chicken in each tortilla. Top with shredded cabbage, pineapple, red onion, and cilantro.
  • Drizzle a little crema over the top and finish with a squeeze of lime. If you like heat, add a few dashes of hot sauce.
  • Serve immediately with extra lime wedges on the side.
