Bacon Wrapped Chicken Bites

Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 strips center-cut bacon (or bacon-wrapped chicken skewers if preferred)
  • 1/4 cup barbecue sauce or maple glaze for brushing
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • to taste salt (if needed)
  • Optional toothpicks for securing bacon

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • In a small bowl, mix smoked paprika, garlic powder, and black pepper. Lightly season the chicken cubes with the spice blend.
  • Wrap each chicken cube with a half strip of bacon, securing with a toothpick if needed. Place seam-side down on the prepared sheet.
  • Brush the tops with barbecue sauce or maple glaze for a glossy finish. This adds a touch of sweetness and helps the bacon crisp as it bakes.
  • Bake for 18–22 minutes, until the bacon is crispy and the chicken is cooked through. If you like a crisper finish, turn on the broiler for the last 1–2 minutes, watching closely.
  • Remove from the oven and let rest for a couple of minutes. Serve warm, with extra sauce on the side if you like.
