- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 1/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp neutral oil
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to heat preference)
- 1 tsp rice vinegar
- 1/4 cup breadcrumbs (optional for extra crunch)
- to taste oil for frying or baking spray
- chopped green onions, for garnish
- toasted sesame seeds, for garnish
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and rice vinegar to make the Bang Bang sauce. Taste and adjust heat by adding more sriracha if you like it spicier.
Pat the chicken pieces dry. In a shallow dish, mix flour, cornstarch, salt, and pepper. Toss the chicken pieces in the flour mixture until well coated.
If you’re frying, heat about 1/2 inch of oil in a skillet over medium heat. Fry the coated chicken in batches until golden and cooked through, about 3–4 minutes per side. Drain on paper towels. If baking, preheat to 425°F (220°C), spray a baking sheet with oil, arrange coated chicken, and bake 12–15 minutes, flipping halfway, until crisp and cooked through.
Toss the hot chicken in a bowl with the Bang Bang sauce until evenly coated. If you like extra crunch, sprinkle on breadcrumbs during the toss for a light crust.
Transfer to a serving plate. Garnish with chopped green onions and sesame seeds. Serve immediately.
