Buffalo Chicken Meatloaf
A cozy, easy-to-make meatloaf that uses ground chicken, buffalo sauce, and a tangy blue cheese finish. Comforting, a little spicy, and weeknight friendly. Serves 4.

- 1 lb ground chicken
- 3/4 cup panko breadcrumbs
- 1/2 cup hot buffalo sauce
- 1 large egg
- 1/4 cup milk
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup blue cheese crumbles
- 1 tsp garlic powder
- 1/2 tsp onion powder
- to taste salt and pepper
- 2 tbsp extra buffalo sauce for serving (optional)
Preheat your oven to 375°F (190°C). Line a loaf pan or shape the meat mixture into a loaf on a parchment-lined tray for a cleaner bake.
In a large bowl, combine ground chicken, breadcrumbs, egg, milk, celery, onion, garlic, blue cheese, garlic powder, and onion powder.
Pour in the buffalo sauce and mix gently just until everything is evenly distributed. Avoid overworking the mixture to keep the meatloaf tender.
Season with salt and pepper to taste. If you like extra heat, reserve a little buffalo sauce to brush on top before baking.
Shape the mixture into a loaf about 9x5 inches. Place in the prepared pan or on a baking sheet.
Bake for about 45 minutes, or until the internal temperature reaches 165°F (74°C). If using a glaze, brush with more buffalo sauce at the 30-minute mark and again near the end of baking.
Let the meatloaf rest for 5–10 minutes before slicing. Serve with a drizzle of buffalo sauce on top if desired.
