Buffalo Chicken Meatloaf

A cozy, easy-to-make meatloaf that uses ground chicken, buffalo sauce, and a tangy blue cheese finish. Comforting, a little spicy, and weeknight friendly. Serves 4.

Ingredients
  

  • 1 lb ground chicken
  • 3/4 cup panko breadcrumbs
  • 1/2 cup hot buffalo sauce
  • 1 large egg
  • 1/4 cup milk
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup blue cheese crumbles
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste salt and pepper
  • 2 tbsp extra buffalo sauce for serving (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a loaf pan or shape the meat mixture into a loaf on a parchment-lined tray for a cleaner bake.
  • In a large bowl, combine ground chicken, breadcrumbs, egg, milk, celery, onion, garlic, blue cheese, garlic powder, and onion powder.
  • Pour in the buffalo sauce and mix gently just until everything is evenly distributed. Avoid overworking the mixture to keep the meatloaf tender.
  • Season with salt and pepper to taste. If you like extra heat, reserve a little buffalo sauce to brush on top before baking.
  • Shape the mixture into a loaf about 9x5 inches. Place in the prepared pan or on a baking sheet.
  • Bake for about 45 minutes, or until the internal temperature reaches 165°F (74°C). If using a glaze, brush with more buffalo sauce at the 30-minute mark and again near the end of baking.
  • Let the meatloaf rest for 5–10 minutes before slicing. Serve with a drizzle of buffalo sauce on top if desired.
