Caprese Style Chicken Cutlets
A light, satisfying weeknight dish featuring tender chicken cutlets topped with fresh mozzarella, ripe tomatoes, and fragrant basil. This Caprese-inspired recipe is quick to assemble, pan-sears beautifully, and pairs perfectly with a simple green salad or crusty bread for soaking up any juices.

- 1 lb chicken cutlets, pounded to even thickness
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves, torn
- 2 tbsp balsamic glaze (optional)
Season the chicken cutlets with salt and pepper on both sides.
Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add the chicken and cook 3–4 minutes per side until golden and cooked through. Remove from the pan and set aside.
In the same skillet, add the halved cherry tomatoes. Sauté for 2–3 minutes until they just begin to soften and release their juices.
Return the chicken to the skillet. Layer each cutlet with slices of fresh mozzarella and allow the cheese to melt over low heat, about 1–2 minutes.
Top with torn basil leaves and a light drizzle of balsamic glaze if using. Serve immediately.
