Caprese Style Chicken Cutlets

A light, satisfying weeknight dish featuring tender chicken cutlets topped with fresh mozzarella, ripe tomatoes, and fragrant basil. This Caprese-inspired recipe is quick to assemble, pan-sears beautifully, and pairs perfectly with a simple green salad or crusty bread for soaking up any juices.

Ingredients
  

  • 1 lb chicken cutlets, pounded to even thickness
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp balsamic glaze (optional)

Instructions
 

  • Season the chicken cutlets with salt and pepper on both sides.
  • Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add the chicken and cook 3–4 minutes per side until golden and cooked through. Remove from the pan and set aside.
  • In the same skillet, add the halved cherry tomatoes. Sauté for 2–3 minutes until they just begin to soften and release their juices.
  • Return the chicken to the skillet. Layer each cutlet with slices of fresh mozzarella and allow the cheese to melt over low heat, about 1–2 minutes.
  • Top with torn basil leaves and a light drizzle of balsamic glaze if using. Serve immediately.
