Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 burger buns
  • 1 ripe avocado
  • 1/2 red onion, finely chopped
  • 1 lime, juice of
  • 2 tbsp cilantro, chopped
  • 1 tomato, diced
  • 1 pinch of salt for avocado salsa

Instructions
 

  • In a medium bowl, mix the ground chicken with breadcrumbs, egg, paprika, salt, and pepper. Gently combine until just merged; avoid overworking the meat so the burgers stay tender.
  • Form the mixture into four evenly sized patties. If the mix feels loose, chill them for about 10 minutes to help them hold together.
  • Preheat a skillet over medium heat with a light coating of oil. Cook the patties for 5 to 6 minutes per side, until they reach an internal temperature of 165F (74C) and are nicely browned.
  • While the burgers cook, prepare the avocado salsa. Dice the avocado and toss with chopped red onion, lime juice, cilantro, and tomato. Add a pinch of salt to brighten the flavors.
  • Toast or warm the burger buns briefly. Assemble by placing a chicken patty on each bun, adding a generous spoon of avocado salsa on top, and finishing with the top bun.
  • Serve immediately. A simple side like a green salad or baked sweet potato fries pairs nicely with these burgers.
