Chicken Gnocchi Soup

Ingredients
  

  • 1 Tablespoon Olive oil
  • 1 Small Onion, diced
  • 2 Medium Carrots, peeled and diced
  • 2 Stalks Celery, diced
  • 2 Cloves Garlic, minced
  • 2 Small Chicken breasts, thinly sliced or cubed
  • 4 cups Chicken broth
  • 1 Cup Gnocchi (potato gnocchi)
  • 1/2 Cup Heavy cream or half-and-half
  • 2 Cup Fresh spinach leaves
  • 1 Teaspoon Dried thyme or Italian seasoning
  • 1/2 Teaspoon Salt, plus more to taste
  • 1/4 Teaspoon Black pepper
  • 1/4 Cup Grated Parmesan cheese (optional, for serving)

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables are tender and the onion is translucent.
  • Stir in the garlic and cook for another 30 seconds until fragrant. Add the chicken and cook until just lightly browned on the edges.
  • Pour in the chicken broth. Bring the mixture to a gentle simmer and cook for 8 to 10 minutes, or until the chicken is cooked through and the flavors meld.
  • Add the gnocchi and simmer for 3 to 4 minutes, or until they float to the top and are tender. If you prefer softer gnocchi, cook a minute longer.
  • Stir in the cream and the spinach. Cook just until the spinach wilts, about 1 to 2 minutes. Taste and adjust seasoning with salt and pepper.
  • Ladle into bowls and sprinkle with Parmesan if desired. Serve with crusty bread or a green salad for a complete meal.
