- 1 Tablespoon Olive oil
- 1 Small Onion, diced
- 2 Medium Carrots, peeled and diced
- 2 Stalks Celery, diced
- 2 Cloves Garlic, minced
- 2 Small Chicken breasts, thinly sliced or cubed
- 4 cups Chicken broth
- 1 Cup Gnocchi (potato gnocchi)
- 1/2 Cup Heavy cream or half-and-half
- 2 Cup Fresh spinach leaves
- 1 Teaspoon Dried thyme or Italian seasoning
- 1/2 Teaspoon Salt, plus more to taste
- 1/4 Teaspoon Black pepper
- 1/4 Cup Grated Parmesan cheese (optional, for serving)
Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables are tender and the onion is translucent.
Stir in the garlic and cook for another 30 seconds until fragrant. Add the chicken and cook until just lightly browned on the edges.
Pour in the chicken broth. Bring the mixture to a gentle simmer and cook for 8 to 10 minutes, or until the chicken is cooked through and the flavors meld.
Add the gnocchi and simmer for 3 to 4 minutes, or until they float to the top and are tender. If you prefer softer gnocchi, cook a minute longer.
Stir in the cream and the spinach. Cook just until the spinach wilts, about 1 to 2 minutes. Taste and adjust seasoning with salt and pepper.
Ladle into bowls and sprinkle with Parmesan if desired. Serve with crusty bread or a green salad for a complete meal.
