Classic Shredded Chicken Salad Sandwich

- 2 cups shredded cooked chicken
- 1/2 cup mayonnaise
- 1 Tablespoon lemon juice
- 1 stalk celery, finely diced
- 1/4 cup grapes, halved (optional)
- 1 Tablespoon finely chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices bread or rolls

In a medium bowl, combine the shredded chicken, mayonnaise, lemon juice, celery, grapes (if using), and parsley. Stir gently until the ingredients are evenly coated.
Season with salt and pepper. Taste and adjust the dressing if you like it tangier or creamier.
Toast the bread lightly if you prefer a bit of crunch. You can also use your favorite rolls or a wrap.
Spoon the chicken salad onto half of the bread slices. Top with greens if you’re using them, then crown with the remaining bread slices.
