Ingredients
  

  • Bread: 2 slices of your favorite kind. I'm a huge fan of a hearty sourdough or a good whole-grain bread for this, but honestly, use whatever you have on hand.
  • Cottage Cheese: About 1/2 cup. Full-fat gives you the creamiest texture, but low-fat works just fine too!
  • Avocado: 1 whole ripe avocado. You know the one... it gives just a little when you press it gently. That's the one you want!
  • Lemon Juice: A small squeeze, maybe a teaspoon or so. This little trick keeps the avocado from turning brown and adds a nice bit of brightness.
  • Seasoning: A pinch of salt and freshly cracked black pepper.
  • Optional Toppings: This is where you can get creative! A sprinkle of red pepper flakes for heat, some everything bagel seasoning, fresh dill, or chopped chives.

  • Mash the Avocado: While the bread is toasting, slice your avocado in half, remove the pit, and scoop the flesh into a small bowl. Add the squeeze of lemon juice, salt, and pepper. Mash it up with a fork until it reaches your desired consistency. I personally like to leave it a little chunky for texture, but you do you!
  • Assemble Your Masterpiece: Once the toast is ready, it's time to build. Spread a generous layer of cottage cheese on each slice. Then, top it with your mashed avocado mixture.
  • Garnish and Serve: Now for the fun part! Sprinkle on any of your favorite toppings. A little bit of everything bagel seasoning is my go-to. Serve it up immediately and enjoy that deliciousness.
