Ingredients
  

  • 2 pounds chicken wings, split at joints and tips removed
  • 1 tbsp baking powder (monohydrate, not baking soda)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil

Instructions
 

  • Pat the chicken wings dry with paper towels. The drier the skin, the crispier they’ll get, so a quick pat-down helps.
  • In a large bowl, combine the baking powder, paprika, garlic powder, onion powder, salt, pepper, and cayenne. Stir to create a quick rub.
  • Add the wings to the bowl and toss with the rub until evenly coated. Drizzle with olive oil and toss again so every piece has a light coating.
  • Preheat your air fryer to 400°F (200°C) if your model requires preheating.
  • Arrange the wings in a single layer in the air fryer basket. You may need to work in batches to prevent overcrowding.
  • Air fry for 20–25 minutes, turning halfway through, until the skin is crisp and the wings reach an internal temperature of at least 165°F (74°C).
  • Let the wings rest for a couple of minutes before serving. A quick squeeze of lemon or a sprinkle of extra salt can be nice if you like.
