Ingredients

  • 2 lb sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cinnamon (optional)
  • 1 tbsp fresh lemon juice or apple cider vinegar (optional, for brightness)
  • 1 tbsp chopped fresh parsley or thyme for garnish (optional)

Instructions

  • Preheat the oven to 425 F (220 C). Line a large baking sheet with parchment paper or lightly oil it.
  • Place the cubed sweet potatoes in a large bowl. Drizzle the olive oil and maple syrup over the potatoes.
  • Sprinkle the sea salt, black pepper, and cinnamon if using. Toss everything gently with your hands or a spatula until the sweet potatoes are evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet. Give them a little space so they roast instead of steam.
  • Roast for 25 to 30 minutes, stirring once about halfway through, until the edges are caramelized and the centers are tender when pierced with a fork.
  • If the potatoes start to brown too quickly, lower the oven to 400 F (200 C) and continue roasting until tender.
  • Remove from the oven. If using, drizzle the lemon juice or vinegar over the potatoes and toss to brighten the flavor.
  • Transfer to a serving bowl and garnish with chopped parsley or thyme. Serve warm.
