- 2 lb sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp ground cinnamon (optional)
- 1 tbsp fresh lemon juice or apple cider vinegar (optional, for brightness)
- 1 tbsp chopped fresh parsley or thyme for garnish (optional)
Preheat the oven to 425 F (220 C). Line a large baking sheet with parchment paper or lightly oil it.
Place the cubed sweet potatoes in a large bowl. Drizzle the olive oil and maple syrup over the potatoes.
Sprinkle the sea salt, black pepper, and cinnamon if using. Toss everything gently with your hands or a spatula until the sweet potatoes are evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet. Give them a little space so they roast instead of steam.
Roast for 25 to 30 minutes, stirring once about halfway through, until the edges are caramelized and the centers are tender when pierced with a fork.
If the potatoes start to brown too quickly, lower the oven to 400 F (200 C) and continue roasting until tender.
Remove from the oven. If using, drizzle the lemon juice or vinegar over the potatoes and toss to brighten the flavor.
Transfer to a serving bowl and garnish with chopped parsley or thyme. Serve warm.
