Garlic Herb Melting Sweet Potatoes
A simple, comforting side dish where tender sweet potatoes meet garlic-infused olive oil and bright herbs. The result is soft, melt-in-your-mouth slices with crisp edges and a savory aroma that makes weeknights feel a touch special.

- 2 large sweet potatoes, peeled and sliced into rounds
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh parsley, chopped
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 1 tablespoon butter (optional, for richness)
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
In a large bowl, toss the sweet potato rounds with olive oil, minced garlic, thyme, parsley, salt, and pepper. Make sure each piece is coated, but not drowning.
Spread the slices in a single layer on the prepared sheet. If you crowd them, they’ll steam instead of caramelize, so give them a little room.
Roast for about 15 minutes, then flip the slices and add the optional butter in small dabs on top of a few pieces. Return to the oven for another 10–15 minutes, until the edges are golden and the centers are tender.
If you like extra brightness, finish with a quick squeeze of lemon or a pinch more fresh herbs just before serving.
