- 1 ripe avocado
- 2 large hard-boiled eggs, peeled and chilled
- 1 tablespoon of mayonnaise (I love Japanese mayo like Kewpie, but any will do!)
- A squeeze of fresh lemon juice
- Salt and freshly ground black pepper, to taste
- Optional toppings: red pepper flakes, everything bagel seasoning, fresh chives, or a drizzle of hot sauce. Go wild!
Toast it up! First things first, get your bread nice and toasted. You want it golden brown and sturdy enough to hold all that deliciousness without getting soggy.
Smash the avocado. While the bread is toasting, scoop the avocado into a small bowl. Add a little squeeze of lemon juice (this keeps it from turning brown), a pinch of salt, and some pepper. Give it a good mash with a fork. I like mine a little chunky, but you do you!
