Ingredients
  

  • 1.5 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • bamboo skewers, soaked in water for 30 minutes

Instructions
 

  • In a bowl, whisk together the Greek yogurt, minced garlic, lemon juice, olive oil, oregano, paprika, salt, and pepper until smooth.
  • Add the chicken pieces to the bowl and toss to coat well. Cover and refrigerate for at least 2 hours, or up to 4 hours, so the flavors can mingle and the yogurt can help tenderize the meat.
  • Preheat your grill to medium-high heat, or set the broiler to high and position a rack about 6 inches from the heat source.
  • Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.
  • Grill or broil the skewers for about 5–7 minutes per side, turning once, until the chicken is cooked through and charred in spots.
  • Let the skewers rest for a couple of minutes, then serve with your favorite sides or a dollop of tzatziki.
