Greek Yogurt Marinated Chicken Skewers
These Greek Yogurt Marinated Chicken Skewers are tender, juicy, and bright with lemon, garlic, and oregano. The yogurt-based marinade helps keep the chicken moist while adding a tangy, creamy note that pairs beautifully with a quick grill or broil. Perfect for weeknights or casual gatherings, served with a yogurt-dill sauce or a simple cucumber salad.

- 1.5 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon ground paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- bamboo skewers, soaked in water for 30 minutes
In a bowl, whisk together the Greek yogurt, minced garlic, lemon juice, olive oil, oregano, paprika, salt, and pepper until smooth.
Add the chicken pieces to the bowl and toss to coat well. Cover and refrigerate for at least 2 hours, or up to 4 hours, so the flavors can mingle and the yogurt can help tenderize the meat.
Preheat your grill to medium-high heat, or set the broiler to high and position a rack about 6 inches from the heat source.
Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.
Grill or broil the skewers for about 5–7 minutes per side, turning once, until the chicken is cooked through and charred in spots.
Let the skewers rest for a couple of minutes, then serve with your favorite sides or a dollop of tzatziki.
