Preheat the air fryer to 400 F (200 C) for about 3 to 5 minutes while you prep the potatoes.
Cut the sweet potatoes into 1-inch cubes. Try to keep them a similar size so they cook evenly.
In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, smoked paprika, and garlic powder. If you like a hint of sweetness, add the maple syrup or honey and toss again.
Place the sweet potatoes into the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to do this in two batches.
Cook at 400 F for 12 minutes, then shake or gently toss the basket to turn the potatoes. Continue cooking for another 8 to 12 minutes, until the edges are crisp and the centers are tender when pierced with a fork.
If you want an extra golden finish, increase the temperature to 410 F for the last 2 minutes but watch closely so they do not burn.
Remove the sweet potatoes to a serving bowl. Sprinkle with chopped parsley and an additional pinch of salt if needed. Serve hot.
