Ingredients

  • 2 pounds sweet potatoes, scrubbed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon maple syrup or honey (optional, for a touch of sweetness)

Instructions

  • Preheat the air fryer to 400 F (200 C) for about 3 to 5 minutes while you prep the potatoes.
  • Cut the sweet potatoes into 1-inch cubes. Try to keep them a similar size so they cook evenly.
  • In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, smoked paprika, and garlic powder. If you like a hint of sweetness, add the maple syrup or honey and toss again.
  • Place the sweet potatoes into the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to do this in two batches.
  • Cook at 400 F for 12 minutes, then shake or gently toss the basket to turn the potatoes. Continue cooking for another 8 to 12 minutes, until the edges are crisp and the centers are tender when pierced with a fork.
  • If you want an extra golden finish, increase the temperature to 410 F for the last 2 minutes but watch closely so they do not burn.
  • Remove the sweet potatoes to a serving bowl. Sprinkle with chopped parsley and an additional pinch of salt if needed. Serve hot.
