Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 cup crumbled feta cheese
  • 0.25 cup honey
  • 1 tablespoon hot sauce
  • 0.5 teaspoon red pepper flakes
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish with a little of the olive oil or line it with parchment paper to prevent sticking.
  • Pat the boneless skinless chicken breasts dry with paper towels, then place them in the prepared baking dish in a single layer.
  • Drizzle the chicken breasts with the olive oil, turning them gently so they are lightly coated on both sides.
  • In a small bowl, mix together the kosher salt, black pepper, garlic powder, and smoked paprika. Sprinkle this seasoning mixture evenly over both sides of the chicken breasts.
  • Cover the baking dish loosely with foil and bake the seasoned chicken in the preheated oven for 15 minutes.
  • While the chicken bakes, add the honey, hot sauce, red pepper flakes, and lemon juice to a small bowl. Whisk until the hot honey mixture is smooth and well combined.
  • After 15 minutes of baking, carefully remove the foil from the baking dish. Spoon about half of the hot honey mixture evenly over the partially cooked chicken breasts.
  • Sprinkle the crumbled feta cheese generously over the top of each chicken breast, pressing it lightly so it adheres to the hot honey glaze.
  • Return the baking dish to the oven, uncovered, and bake for another 8 to 10 minutes, or until the chicken is cooked through and the feta is soft and lightly golden at the edges.
  • Remove the baked hot honey feta chicken from the oven and let it rest in the baking dish for 5 minutes so the juices settle.
  • Drizzle the remaining hot honey mixture over the rested chicken breasts for extra flavor and moisture.
  • Sprinkle the chopped fresh parsley over the top of the chicken just before serving, then plate and enjoy while warm.
