Preheat your oven to 400°F (200°C). Lightly grease a baking dish with a little of the olive oil or line it with parchment paper to prevent sticking.
Pat the boneless skinless chicken breasts dry with paper towels, then place them in the prepared baking dish in a single layer.
Drizzle the chicken breasts with the olive oil, turning them gently so they are lightly coated on both sides.
In a small bowl, mix together the kosher salt, black pepper, garlic powder, and smoked paprika. Sprinkle this seasoning mixture evenly over both sides of the chicken breasts.
Cover the baking dish loosely with foil and bake the seasoned chicken in the preheated oven for 15 minutes.
While the chicken bakes, add the honey, hot sauce, red pepper flakes, and lemon juice to a small bowl. Whisk until the hot honey mixture is smooth and well combined.
After 15 minutes of baking, carefully remove the foil from the baking dish. Spoon about half of the hot honey mixture evenly over the partially cooked chicken breasts.
Sprinkle the crumbled feta cheese generously over the top of each chicken breast, pressing it lightly so it adheres to the hot honey glaze.
Return the baking dish to the oven, uncovered, and bake for another 8 to 10 minutes, or until the chicken is cooked through and the feta is soft and lightly golden at the edges.
Remove the baked hot honey feta chicken from the oven and let it rest in the baking dish for 5 minutes so the juices settle.
Drizzle the remaining hot honey mixture over the rested chicken breasts for extra flavor and moisture.
Sprinkle the chopped fresh parsley over the top of the chicken just before serving, then plate and enjoy while warm.
