Lemon Garlic Butter Keto Chicken Breast

- 4 pieces boneless skinless chicken breasts
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 medium lemon, zest and juice
- 1/2 tsp salt, adjust to taste
- 1/4 tsp black pepper
- 1/2 tsp paprika (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
Pat the chicken dry with paper towels. This helps it brown nicely. Season both sides with salt, pepper and paprika if using.
In a large skillet over medium heat, add olive oil. When the oil shimmers, add the chicken and cook for 5 to 6 minutes per side, until golden and cooked through. Remove to a plate and cover loosely with foil.
In the same skillet, reduce heat to medium low. Add the butter and let it melt, then add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
Stir in lemon zest and lemon juice. Scrape up any brown bits from the bottom of the pan. Return the chicken to the skillet and spoon the lemon garlic butter over the chicken to coat. Cook for another 1 to 2 minutes to meld the flavors.
Remove from heat. Spoon any extra sauce over the chicken, garnish with chopped parsley, and serve hot.
