- 2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 tablespoon maple syrup or honey (optional, for a touch of sweetness)
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
Wash, peel (if desired) and cut the sweet potatoes into roughly 1/2-inch cubes so they cook evenly.
Place the cubed sweet potatoes in a large bowl. Add the olive oil, kosher salt, black pepper, smoked paprika, and garlic powder. If using maple syrup or honey, add it now.
Toss everything together until the sweet potato cubes are evenly coated. Use your hands or a spatula to make sure each piece has a little oil and seasoning.
Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Give them a bit of space so they roast instead of steam.
Bake for 20 to 25 minutes, tossing once halfway through. Roast until the edges are lightly browned and crisp and the centers are tender when pierced with a fork.
Remove from the oven and let them rest for 2 to 3 minutes. Taste and adjust salt if needed. Sprinkle with chopped parsley before serving, if using.
