Slow Cooker Honey Garlic Chicken

Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon sesame oil (optional)
  • 1 teaspoon ginger, grated (optional)
  • to taste pinch black pepper
  • 2 tablespoons scallions, sliced (for garnish)

Instructions
 

  • Place the chicken thighs in the slow cooker.
  • In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and optional ginger. Pour the mixture over the chicken.
  • Cover and cook on low for 4–6 hours, until the chicken is tender and cooked through.
  • In a small bowl, mix cornstarch with water to create a slurry.
  • Transfer the chicken to a plate. Stir the slurry into the sauce in the slow cooker and let it simmer for 5–10 minutes, until the sauce thickens.
  • Return the chicken to the slow cooker and coat with the thickened sauce. Drizzle sesame oil if using.
  • Garnish with sliced scallions and serve hot over rice or with steamed vegetables.
