Spiced Orange Melting Sweet Potatoes

Ingredients
  

  • 1.5 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 medium orange zested and juiced
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/8 tsp crushed red pepper flakes optional for a gentle kick
  • 1 pinch salt
  • 1-2 tbsp honey or maple syrup to taste
  • 1 tbsp butter or additional olive oil for a glossy finish

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
  • In a large bowl, toss the cubed sweet potatoes with olive oil, salt, cinnamon, ginger, and red pepper flakes if you’re using them. Make sure every piece gets a light coating.
  • Spread the potatoes in a single layer on the baking sheet. Roast for 18-22 minutes, until the edges are caramelized and the centers are tender. Give them a shake halfway through to promote even browning.
  • While the potatoes roast, zest the orange and juice it. You’ll want about 2-3 tablespoons of juice and the zest for brightness.
  • When the potatoes are nearly done, pour the orange juice and zest over them. Return to the oven for 3-5 minutes to let the glaze thicken and cling to the pieces. If you like a richer finish, dot with butter in the last minute so it melts into the glaze.
  • Remove from the oven and drizzle with honey or maple syrup to taste. Toss gently to coat. Taste and adjust salt and sweetness if needed.
  • Transfer to a warm serving dish and finish with a final minty or citrusy note if you have it—a tiny squeeze of extra orange juice or a sprinkle of orange zest works nicely.
