Spiced Orange Melting Sweet Potatoes

- 1.5 lb sweet potatoes peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 1 medium orange zested and juiced
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/8 tsp crushed red pepper flakes optional for a gentle kick
- 1 pinch salt
- 1-2 tbsp honey or maple syrup to taste
- 1 tbsp butter or additional olive oil for a glossy finish
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
In a large bowl, toss the cubed sweet potatoes with olive oil, salt, cinnamon, ginger, and red pepper flakes if you’re using them. Make sure every piece gets a light coating.
Spread the potatoes in a single layer on the baking sheet. Roast for 18-22 minutes, until the edges are caramelized and the centers are tender. Give them a shake halfway through to promote even browning.
While the potatoes roast, zest the orange and juice it. You’ll want about 2-3 tablespoons of juice and the zest for brightness.
When the potatoes are nearly done, pour the orange juice and zest over them. Return to the oven for 3-5 minutes to let the glaze thicken and cling to the pieces. If you like a richer finish, dot with butter in the last minute so it melts into the glaze.
Remove from the oven and drizzle with honey or maple syrup to taste. Toss gently to coat. Taste and adjust salt and sweetness if needed.
Transfer to a warm serving dish and finish with a final minty or citrusy note if you have it—a tiny squeeze of extra orange juice or a sprinkle of orange zest works nicely.
